Vegetables for breakfast

It is tough to manage getting your daily serving of vegetables! In fact, the CDC reports that only 1 in 10 adults meet the federal fruit or vegetable recommendations. It’s suggested by the CDC that adults get 1.5-2 cups of fruit and 2-3 cups of vegetables per day as a part of a healthy eating pattern.

That being said, the more opportunities to add vegetables to a meal throughout the day, the BETTER!

Making sure you eat a wide variety of vegetables daily will help to ensure that you get all the vitamins and minerals you need for your body to optimally function. Not to mention, the more you eat, the better you’ll feel! And what better way to start your day than with one of these veggie forward breakfast ideas!

Avocado Toast

The most obvious veggie breakfast! Most people love avocado toast and it’s become insanely popular over the years because it’s SO easy and delicious. You can get creative with your toast and add other veggies like radishes, cucumber, or micro greens! You can add spices like Everything But the Bagel seasoning, or Turmeric. You can add some protein to round out the meal by adding an egg or some chick peas. The possibilities are endless!

Sweet Potato “toast”

You may have seen the trend of cutting large slices of sweet potato and using it as a piece of “toast” which you can top with avocado, or peanut butter. Honestly, I thought this was a crazy health nut fad—and then I tried it… It was totally delicious! You get that carb sans gluten, and depending on what you top it with, you can get a fully round meal. It was super delicious! I enjoyed mine with some smashed avocado, scallions, and a hard boiled egg.

Greens and Eggs

This is probably my go to. It’s so fast and easy! I always have TONS of greens on hand, so I like to quickly cook them down with a little garlic, crushed red pepper, salt and pepper, and then serve them alongside a piece of sourdough toast and eggs. It’s so simple and delicious. You could also just add a salad to your eggs! Often in the Spring and Summer, when vegetables are at their peak season, I’ll make a beautiful salad to eat alongside scrambled eggs or a quiche. You could also cut up whatever veggies you have and toss them into a frittata or scramble them into eggs!

Herbs are important too!

Don’t forget about herbs! You can simply throw some on your avocado toast or into your eggs for a flavor boost. It adds interest, flavor and they are packed with antioxidants, flavonoids as well as vitamins and minerals to support the body.
